Spam & Egg Fried Rice

Hello Foodies!

Let me take you back to my college years! The fried rice I would make when I’m lazy, in a hurry, or just don’t have the patience to wait for rice to cook. SPAM & EGG fried rice. Not the healthiest but it sure does taste yummy! That is if you like Spam. haha This recipe is super easy and quick. There’s not much to it. It’s basically just spam and eggs and rice…. and a little soy sauce, fish sauce, and sugar. That’s about it. Just thought it would be fun to bring y’all back to the good old days. Main Ingredients

Spam, eggs, rice, and green onions Stir fry add a little soy sauce, fish sauce, and sugar and you’re good to go! Enjoy with Kimchi!

Spam & Egg Fried Rice

Serves: 1 Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1 cup cooked short grain rice (or your rice of choice)
  • 1/4 of the spam (cut/cubed)
  • 2 eggs (with a pinch of salt and pepper)
  • 1-2 green onion (chopped)
  • 1 tsp soy sauce
  • 1/2 tsp fish sauce (optional)
  • 1 tsp sugar
  • Oil to stir fry
  • Kimchi on the side
  • Drizzle of sesame oil (optional)

Instructions

On high heat, add about 1 tbsp oil to your nonstick pan. Fry/saute the diced spam until it is a little crispy. Pull it to the side and add in a little bit more oil and scramble the egg (do not overcook). Scooch the egg to the Spam and then add the rice and seasonings. Mix well to incorporate and saute for 1 minute or so. Turn off the heat and then add the chopped green onions. Stir and drizzle some sesame oil over and mix. Pour on plate or bowl and enjoy with kimchi or other side dishes you like.

Thank you for sharing this! I watched it on YouTube a couple of times this evening and found your site so I can tell you how it turned out. I quadrupled the recipe and used cubed extra firm tofu instead of eggs. I also chopped some frozen asparagus instead of onions. I used 1.5 tsp sugar and a Tblsp. of Panda Express sweet chili sauce. And fried it up in leftover bacon grease.
It’s delicious!!!! ? Yum!
I had never made fried rice before, and you made it so easy! Thank you!
Maybe next time I’ll try it with eggs. Lately, I’ve been going through my pantry and using things up before they go bad.
