Salt and Pepper Shrimp

I wanted to share with you all my salt and pepper shrimp recipe. This version is the shell on shrimp one. It’s super easy and quite tasty. Perfect to make for any occasion. If you love salt and pepper shrimp, give this one a go. 🙂 Happy Cooking.


Main Ingredients

Shrimp: You can use shell on or shell off shrimp. If you use shell on shrimp, be sure to give any sharp parts, legs, head, etc a trim before cooking. I also like to remove the digestive tract of the shrimp by using a toothpick as well.

Coat with cornstarch. You can also use potato starch but cornstarch gives it a lighter texture and better color.  Fry  Make the salt and pepper seasoning mixture. I like to use a combination of fresh cracked pepper, salt, garlic powder, and msg. Sugar can be added if you like a little bit of sweetness but I don’t so I usually don’t add it in. Other vegetables/spices: I like to add sliced onions, green onions, and jalapeños. Let it char but keep it somewhat still a little crunchy. Then add in the fried shrimp and seasoning. Mix well and enjoy!

Salt & Pepper Shrimp

The classic salt and pepper shrimp that is crispy, a little spicy, salty and oh so good!

Ingredients
  

For the Shrimp

  • 1.5 lbs shell on shrimp
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp fresh cracked black pepper
  • 1/2 cup cornstarch

For the seasoning

  • 1/2 tsp salt
  • 1 tsp fresh cracked black pepper
  • 1/4 tsp garlic powder
  • 1/8-1/4 tsp MSG (add as much as you like)

Vegetables/other

  • 1 small onion (sliced)
  • 2 green onion (sliced)
  • 2 whole jalapeno (sliced)
  • Oil to fry

Instructions
 

Make the seasoning

  • In a bowl, add in the required seasonings and mix well. Set aside to be added later at the end to season everything.

For the Shrimp

  • With a toothpick, insert it into the middle top part of the shrimp to remove the digestive tract. With scissors, cut off the legs, rostum, and antennula off. You can trim off any parts you don't care for. It's up to you. Gently rinse the shrimp and drain well. Place the cleaned shrimp into a bowl and add in the seasonings. Mix well. Then add in the cornstarch and gently toss to fully coat it completely. Let it sit for a good 15 minutes to allow the cornstarch to fully stick onto the shrimp before frying. 

Cooking

  • Heat about 2 quarts of vegetable oil to 375'F. Deep fry the shrimp in two batches so you don't overcrowd the pan and drop the oil temp. Fry the shrimp for 4-5 minutes until orange and crispy. Place into a colander and set aside.
  • Then in a pan, add in 2 tbsp of the frying oil and cook the sliced onions, green onion, and jalapeno on high heat. Let it sit for 1 minute without stirring to get it some good char/flavor. Stir and cook for only 3 minutes. You still want a decent bite to the onions. Turn off heat and add in the fried shrimp and the seasoning and mix to coat. Serve with rice or eat as it. Enjoy! 

Notes

You can add more salt if you desire.
