Blistered Summer Peppers: Hov Txob Kib

Here’s a super EASY & SIMPLE side dish for you all: Blistered summer peppers. In the Hmong Leeg dialect, we like to call this dish Hov Txob Kib. Hov txob means peppers and kib means to fry. It’s a common side dish you can typically see the Hmong people make when summer peppers are in season, especially the sweet peppers. We usually eat it as a side dish to pair it with some rice and grilled meat. There’s not much to this side dish. It’s pretty straightforward. You blister the peppers in oil and sprinkle some salt on. That’s it! Yeah! But since some of you wanted to see how make it, I’d thought I would share. 🙂  So give it a go and enjoy!

Summer peppers!

Sweet summer peppers to be exact. My Grandma likes to plant banana peppers. They are sweet and fried up nicely.

Here are a list of summer peppers we like to grow for cooking:

  • Banana peppers
  • Anaheim peppers
  • Korean chili peppers
  • Shishito peppers
  • Cubanelle peppers

Blister in some oil
Give it some good char! This is what gives it flavor Sprinkle with salt and enjoy!

Blistered Summer Peppers: Hov Txob Kib

Serves: 4-6 Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 12-18 summer peppers (Banana, Anaheim, Korean, or Shishito peppers) [leave stem on]
  • 1/4 cup oil
  • Salt to taste
  • Non stick pan with lid

Instructions

  1. Rinse and pat dry the peppers well
  2. In a non stick pan, add 1/4 cup of oil. Heat until the oil is hot (medium high heat). Then add in the peppers and cover with a lid immediately. Let it steam and blister for about 2-3 minutes or so on high. Shaking the pan as you go for even cooking. Uncover the lid and let the peppers brown evenly by flipping them individually. This should take 3-5 more minutes to brown evenly.
  3. Once it's cooked to your liking, remove the peppers and place onto a plate. Sprinkle with salt and enjoy with some rice and meat!

Notes

Blistering on high heat will give the pepper a really nice smoky yet sweet flavor
