Here’s to another salt and pepper dish! Crispy chicken skin version! YES! Chicken skin version. If you love crispy crispy skin, this dish is for you. The spice from the jalapeno, sweetness from the onions with the salt & pepper seasoning all together with the savoriness and nuttiness of the chicken skin is just TOO GOOD! The texture and flavor is just out of this world. Pair it with fresh sticky rice and you will be in pure heaven. So give this recipe a try and happy cooking!
Main Ingredients
Chicken Skin! Yes! I used quite a lot because they do shrink a lot after they’re cooked. I’ve been collecting chicken skin when I buy chicken thigh so I was able to get enough for this dish. You can also ask your local butcher to see if they sell it by the pound.
Render the chicken skin until it get golden crispy! Prep the vegetables/aromatics. Then saute to your desire consistency.
Mix the salt and pepper seasoning Add to the saute vegetables & crispy chicken skin!
Enjoy as is, with rice, or my favorite: Sticky Rice! This dish is also amazing with beer 🙂

Salt & Pepper Crispy Chicken Skin
Ingredients
For the chicken skin
- 1.5 lbs chicken skin (roughly cut)
- 1/2 tsp sea salt (sea salt is preferred)
- 1/2 tsp freshly cracked black pepper
- 1/2 tsp garlic powder
For the salt and pepper seasoning
- 1 tsp sea salt (sea salt is preferred)
- 1 tsp freshly cracked black pepper
- 1/4 tsp garlic powder
- 1/4 tsp chicken boullion powder (Totole brand)
Vegetables
- 1 small onion (sliced)
- 2 green onion stalks (sliced)
- 2 jalapeno (sliced)
Instructions
For the chicken skin
- In a good non stick pan, add in the chicken skin along with the seasoning. Cook on medium high heat for 8-10 minutes to fully render out the fat. It should get extra golden brown & crispy. Once fully crispy, drain in a colander and set aside.
For the salt and pepper seasoning
- Add everything into a small bowl and mix well. Set aside.
Vegetables
- Add about 2 Tbsp of chicken fat and cook the sliced onions, green onion, and jalapeno on high heat. Let it sit for 1 minute without stirring to get it some good char/flavor. Stir and cook for only 3 minutes. You still want a decent bight to the onions. Turn off heat and add in the crispy chicken skin and the seasoning and mix to coat. Serve with sticky rice or rice or eat as it.
