Salt & Pepper Oyster Mushrooms

Here’s to another salt and pepper dish! This time, we’re making it with MUSHROOMS! And yes, it’s vegetarian 🙂 It’s crispy, full of umami, and quite addicting to eat. So give this recipe a try if you like mushroom!


Main Ingredients

Oyster Mushrooms: Oyster mushrooms are great for frying since they are thicker and produces a little less water compared to other shrooms. They are a little more “meatier” as well. You can use other shrooms of your choice but oyster mushrooms are perfect for this dish. I also tried enoki shrooms which was super tasty but they are a little bit more oiler when fried.

Make the batter to coat the shrooms before frying
Coat & Fried! Make the salt and pepper seasoning which mainly consist of salt, fresh cracked black pepper and garlic powder. I like to use sea salt for all my salt and pepper dishes since it does give it a nice subtle saltiness. Fresh cracked black pepper is a must since it’s a lot more flavorful. Cook the aromatics/vegetables Add in the shrooms & seasoning. Give it a good toss and enjoy while it’s still fresh, hot & crispy! 🙂Eat as is or with a side of rice

Salt & Pepper Oyster Mushrooms

Here's to another salt and pepper dish! This time, we're making it with MUSHROOMS! And yes, it's vegetarian 🙂 It's crispy, full of umami, and quite addicting to eat.

Servings 4 people

Ingredients
  

For the Mushroom

  • 1 lb oyster mushroom (peeled to bite size pieces)
  • 1/2 cup all purpose flour
  • 2 Tbsp cornstarch
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp baking powder
  • 2/3 cups cold water
  • Oil to fry

For the salt and pepper seasoning

  • 1/2 tsp sea salt
  • 1 1/2 tsp fresh cracked black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp mushroom seasoning (OPTIONAL FOR MORE UMAMI)

For the vegetables

  • 1 whole onion (sliced)
  • 3 green onion stalks (sliced)
  • 2 whole Jalapeno (sliced)

Instructions
 

For the mushrooms

  • In a bowl, add in all the dry ingredients along with the cold water. Mix well until there are no lumps. Then add in the mushrooms and gently mix to coat the batter all over the shrooms. Heat oil to 375'F and cook for 8-10 minutes until golden brown. You may have to fry in 2-3 batches so that you don't overcrowd the pan (if you do overcrowd the pan, the oil temp will drop and will create soggy mushrooms, You want the oil temp to maintain a good 375-400'F so the shrooms get's golden crispy. The longer you fry, the crisper the shrooms but they will get dried out. Once golden, allow it to drain before adding it to the cooked onions/pepper.

For the seasoning

  • Mix everything into a small bowl and set aside.

For the vegetables

  • In a pan, add in 2 tbsp of the oil you cooked the mushrooms, turn the heat up to high and add in all the vegetables. Let it sit for 2-3 minutes to allow the high heat give it some char. Then stir and cook for about 3 minutes or so. The onions should still have some crunch to it. Turn off the heat and add in the fried mushrooms and seasonings. Mix well and enjoy while it's still hot and crispy 🙂
