Hello all!
Here is another what I like to call it a Zaub quas laug dish: food for the good old souls (like me): MUSHROOM SOUP. It’s simple, clean, and hits the comfort spot for the winter. This mushroom soup has a variety of different mushrooms boiled with chili peppers, cilantro, and lemongrass. Enjoy it with fresh steamed rice and that’s it! What else can I say, it’s that simple. Basic Ingredients
A variety of mushrooms: Oyster, Cremini, Shimeji, Enoki
Herbs/spices : Cilantro, culantro, lemongrass and chili peppers
Boil in water and seasoned with salt
Eat with rice
When simplicity is all you need

Ingredients
- 4 cups water
- 2 lbs mixed mushroom (oyster, cremini, shimeji, enoki)
- 1 lemongrass
- 4 chili pepper sliced (more or less)
- 5 sprigs of cilantro chopped
- 6 sprigs of culantro chopped
- 1 tsp salt
Instructions
In a pot add in 4 cups of water and bring it to a boil. Wash and clean all mushrooms and cut into desire size. Once water has come to a boil, add in the shrooms. Let it some to a simmer for 5 minutes until all the shrooms have release most of its moisture. Then add in salt and lemongrass. Simmer for 2-3 minutes to release the lemongrass flavor. Then add in the sliced chili pepper and simmer for 1 minute or until all shrooms are cooked. Add in the chopped cilantro and culantro. Turn the heat off immediately. Stir well and taste to adjust seasonings. Serve hot with rice! Enjoy!

Notes
Add any kind of mushrooms you like. Add more water after shrooms are cooked if you desire a more brothy soup.
