Hey Hey Hey Foodies!
Here is a simple summer noodle dish you all can make with all the delicious herbs that are growing this summer. We call this dish pleev choj. It is a clear noodle dish that contains any type of protein, lots of vegetables, herbs, and sauce. You may see others making pleev choj with bean thread noodles, carrots, mushrooms, bamboo, green onions, etc. etc. But there’s so many ways to make pleev choj. This version is going to contain fresh dill, cilantro, mint, green onions, ground chicken, and all kinds of seasoning sauce. It’s simple and easy to whip up. It’s a great dish to make for big dinner parties. We like to use chicken breast since it has less fat since this dish is likely to eat warm temperature. Instead of bean thread noodles, we will be using a Japanese noodle called Harusame. These noodles are made from potato and corn starch. They are much thicker and soaks up the sauce really well overnight. Like always, you can add other vegetables/ meats into the noodles after making it. So enjoy!
Japanese Harusame noodles
We use this type of noodles instead of bean thread noodles for it’s texture and thickness. This Japanese clear noodles holds up the sauce very well and still taste great the next day. Bean thread noodles can still be used, but we prefer the Harusame noodles for the overall texture and thickness.
HERBS
This noodle goes well with DILL! Other herbs added in are green onions, mint, and cilantro. Other items added can include fried shallots, basil, etc.
Seasonings
LOTS of black pepper, golden mountain seasoning sauce, soy sauce, oyster sauce, chicken bouillon, salt, and sugar. And oil to help mix it all together

Ingredients
- 9oz dried Harusame noodles (or half the 17.6oz bag)
- 1 chicken breast (ground: about 10 oz)
- 2 Tbsp oil
- ---Seasoning---
- 2 Tbsp oyster sauce
- 2 Tbsp golden mountain seasoning sauce
- 1 Tbsp soy sauce
- 1 1/2 tsp sugar
- 1 tsp chicken or mushroom bouillon seasoning
- 1/4 tsp salt
- 2 tsp to 1 Tbsp ground black pepper (start less then add more as needed)
- ---HERBS---
- 1 cup chopped dill
- 3 green onions chopped
- 1/2 cups chopped mint
- 1/2 cup chopped cilantro
- OPTIONAL ITEMS TO ADD: carrots, fried shallots, bamboo shoots, mushrooms, etc.
Instructions
Cooking the noodles
In a pot, add in about 2 quarts of water and bring it to a boil. Once boiled, add in the dried Harusame noodles, stir and cook it for about 8-9 minutes or until cooked. Once cooked, drain it and rinse under cold water. Drain well and set aside.
Cooking the meat and seasoning it
In a pan, add in 2 tbsp of oil. Add in the ground chicken or protein of your choice. Stir and let it fully cook. Then add in all the seasonings except the black pepper. Stir well and let it cook for another 1-2 minutes or until the meat is well coated in with the sauce. Turn off heat and set aside.
Rinse and chop all the herbs
Mixing
In a bowl, place the noodles and the seasoned chicken, and the black pepper in. Mix well until the noodles are coated with the sauce. If it's sticky, add in another tbsp of oil to the noodles. Then add in the fresh herbs and mix well. Taste, adjust and enjoy!
