May 14th, 1975 | 50 Years |

We are here today to celebrate our culture, honor our people, contributions, sacrifices during the Secret War in Laos, and resettlement to the US. 

I spent 30 minutes pondering what I should write for this post. But I realized, I spent the past 30 minutes feeling all sorts of emotions…sad, bittersweet, happy, proud, excited, loved, thankful and so much more. 

We are resilient.

My mom has always been someone so full of love. She is the nicest person you’ll ever meet. She’s humble. She’s hardworking. She’s creative. She has the best smile. She cooks food that touches my soul. She’s truly an inspiration. I have learned so much from her and will continue to treasure everyday and everything I get to do with her. 

So thank you mom for being simply the best. Kuv hlub koj 💛

RICE + EGGS w/ FISH SAUCE Most of you probably g RICE + EGGS w/ FISH SAUCE 

Most of you probably grew up with eggs, soy sauce & rice. But I grew up with eggs, fish sauce & rice. It was such an easy meal to make before heading out to school or whenever we wanted something quick. Since my dad raised chickens growing up, using fresh farmed eggs was even more special because it made it tastier & much more richer in flavor. As the fish sauce cooks, it caramelizes and gives the eggs a delicious umami saltiness to it. I still love it till this day. 

Uncle Bee, this one’s for you! 💛
