Salt & Pepper Pork Spare Ribs

Here’s to my last salt & pepper dish for the year! This version is made with pork spare ribs. It’s super crispy, very flavorful, and addicting. It’s really easy to make so I hope you can give it a try 🙂


Main Ingredients

Pork ribs: You can use any part of the pork you prefer. I like to use spare ribs or riblets since it has bone (for flavor) and a good amount of fat to meat ratio for good moisture.

Marinade Coat with potato starch for extra crispness. Vegetable: I like to add jalapeno peppers, garlic and green onions Salt and pepper seasoning: Consist of freshly cracked black pepper, sea salt, garlic powder, and mushroom seasoning. You can also add a little bit of 5 spice powder for extra flavor!
Fry Cooking the vegetables Mix and enjoy! Eat as is or with some fresh steamed rice

Salt & Pepper Pork Spare Ribs

Salt and pepper pork spare ribs! It's super crispy, very flavorful, and addicting.

Ingredients
  

For the pork spare ribs

  • 2 lbs pork spare ribs or riblets (small chunks)
  • 1 Tbsp Shaohsing Rice Cooking Wine
  • 1 Tbsp oyster sauce
  • 2 tsp sugar
  • 1 tsp ground white pepper
  • 1 tsp garlic powder
  • 1 tsp soy sauce
  • 2 tsp sesame oil
  • 1 cup potato starch (you can also use corn starch if you don't have potato starch)
  • Oil to fry

For the salt & pepper seasonings

  • 1/2 tsp sea salt
  • 1 1/2 tsp freshly cracked black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp mushroom seasoning
  • 1/4 tsp Chinese 5 spice powder (THIS IS OPTIONAL)

Vegetables

  • 2 green onion stalks (chopped)
  • 6 whole garlic cloves (thinly sliced)
  • 2 whole jalapeno (diced)

Instructions
 

For the pork

  • Marinade the pork with everything except the potato starch. Let it marinade in room temperature for 2 hrs or overnight in the fridge. After it has marinaded, then add the potato starch and fully coat the pork. Let it sit for 5 minutes so the meat can soak up the starch before frying it in oil. Fry in vegetable oil heated to 375'F for about 8-10 minutes. Once the pork is golden crispy, place it in a colander to let it drain while you cook the vegetables.

Seasoning/Cooking

  • Mix all the spices together and set aside
  • In a good non stick pan, add in 2 tbsp of the oil you cooked the pork in. Add in the sliced garlic and cook on medium low heat to evenly brown and crisp the garlic. This will take around 1 minute or two. Once you see some browning, add the jalapeno peppers and cook for 1 minutes or so. Then turn off heat and add in the fried pork and the seasonings. Mix well and enjoy while it's still hot & crispy. Enjoy with a side of rice if you desire.
