I wanted to share with you my go to oven baked Cornish hen recipe. It’s marinaded overnight in lots of spices, fish sauce and oven baked to perfection. It’s finger licking delicious and goes so well with your favorite pepper dipping sauce and sticky rice. So I hope you can give this one a go! Happy cooking 🙂
Main Ingredients
The seasonings: I like to do a combination of ground white and black pepper, freshly dried ground coriander seeds, salt, chicken bouillon powder, Golden Mountain seasoning sauce, fish sauce, turmeric, garlic powder, and sugar. The marinade is full of spices. The coriander seeds and turmeric flavors does shine through. So if you’re a little sensitive to coriander & turmeric flavor, you might consider lowering the amount. But it won’t taste the same. So if you love the flavors, lets start cooking! 🙂
Mix everything into a bowl
Clean and cut the Cornish hen. I like to butterfly it starting from the back. Keep the breast intact.
Marinade the Cornish hen overnight for full maximum flavor
The next day, place the hen on a baking tray lined with foil and a baking rack on top. Bake in the oven until fully cooked.
Enjoy it with sticky rice, steamed rice, pepper dip, and also (if you have it) papaya salad. The flavors blends so well together. The Cornish Hen is so flavorful, full of spice, umami, and just perfectly seasoned.

Oven Baked Cornish Hen
Ingredients
- 1/2 tsp salt (4g)
- 1 Tbsp sugar (15g)
- 1 tsp chicken bouillon powder (3g) [Totole brand]
- 1 Tbsp freshly ground dried coriander seeds
- 1/2 tsp ground white pepper (2g)
- 1/2 tsp ground black pepper (2g)
- 2 tsp garlic powder (8g)
- 2 tsp ground turmeric powder (6g)
- 1 Tbsp Golden Mountain Seasoning Sauce (18g)
- 1 Tbsp fish sauce (18g) [Three crab brand]
- 2 Cornish hens (butterflied) (each Cornish hen weighted about 1.5lb)
Instructions
- In a bowl, add in all the spices/seasoning and mix well. Take the marinade and rub it on the butterflied Cornish hens.
- Cover and let it marinade overnight in the fridge. When ready to cook, preheat oven to bake at 450'F. While the oven is preheating, foil line your baking sheet and line with a cooking rack. Place the Cornish hen (skin side up) on top of the cooking rack and place it into the oven to cook for about 30 minutes. After 30 minutes, flip the Cornish hen over to allow the other side to cook for another 20-25 minutes or so. After 25 minutes, rotate back to skin side up and bake for another 10-15 more minutes to get the skin a little bit more crispy. You can go longer or shorter depending on your preference as long as the Cornish hen is cooked to a temperature of 165'F or higher. You can also just set the oven to broil for about 5 minutes to get the skin a little more color/crispy.
- This Cornish hen can also be cooked on your bbq grill! Enjoy with your favorite pepper sauce and a side of sticky rice.
Notes
- If you don't want to use Cornish hen, you can use a 3lb whole chicken that has been butterflied too.
