Cucumber Salad w/ Peanut Dressing

Here’s to one of my favorite ways to use up cucumbers. It’s the perfect salad to make during the summertime. This cucumber salad is dressed in a super delicious sweet, salty, spicy, & sour peanut dressing that makes this salad mouth wateringly so good! So I hope you can give the one a try if you like peanut butter & cucumbers! Happy cooking!


Main Ingredients

The dressing contains, garlic, chili peppers, sugar, fish sauce, lime juice, salt, msg, peanut butter, and roasted peanuts

Cucumber: You can use any cucumber of your choice. I like to use Persian cucumbers or English cucumbers.Adding in some cherry tomatoes for some color/texture
Make the dressing Shred the cucumber, add tomatoes, and the dressing. Mix and enjoy while it’s still crunchy & fresh. If you let this sit, it will get watery. You can also do cucumber ribbons by using a peeler. The only downside to this is it will get really watery since the cucumbers are sliced thin.
You can also smashed the cucumbers: This is my favorite way texturally. It also coats the dressing really well too!

Cucumber Salad w/ Peanut Dressing

Here's to one of my favorite ways to use up cucumbers. It's the perfect salad to make during the summertime. This cucumber salad is dressed in a super delicious sweet, salty, spicy, & sour peanut dressing that makes this salad mouth wateringly so good! Course Salad
Servings 4 People

Ingredients
  

Peanut Dressing

  • 1 small clove garlic
  • 1 dried Bird's Eye chili pepper (you can use fresh+more)
  • 1 TBSP sugar (I use Turbinado sugar)
  • 1/4 tsp sea salt
  • 1/4 tsp MSG
  • 1 TBSP roasted peanuts
  • 1 TBSP lime juice
  • 1 TBSP fish sauce
  • 1 TBSP creamy peanut butter

To finish

  • 14-16 oz English or Persian cucumber (sliced/shredded/smashed/ribboned)
  • 1/2 cup cherry tomatoes (halved)

Instructions
 

For the dressing

  • In a mortar & pestle, add in the garlic, pepper, salt, msg, & sugar. Pound until the garlic & pepper is crushed. Then add in roasted peanuts. Pound a little bit (you can leave it chunky for more texture or pound it finely). Then add in lime juice, fish sauce, and creamy peanut butter. Mix well until the peanut butter is well incorporated. Taste and adjust to your liking. Set aside while you prep the cucumbers.

To finish

  • In a bowl either shred, slice, smash, or ribbon the cucumbers (it's up to you). Add in the cherry tomatoes along with the dressing. Toss to coat and enjoy immediately. If you let it sit, it will get watery so enjoy it while it's still crunchy!

Notes

This dressing can be made a day ahead and be put into the fridge. It's also great as a dip. So instead of dressing the cucumbers, you can simply just dip the cucumber right into the dressing.
