Here's to one of my favorite ways to use up cucumbers. It's the perfect salad to make during the summertime. This cucumber salad is dressed in a super delicious sweet, salty, spicy, & sour peanut dressing that makes this salad mouth wateringly so good! So I hope you can give the one a try if you like peanut butter & cucumbers!
1driedBird's Eye chili pepper (you can use fresh+more)
1TBSPsugar(I use Turbinado sugar)
1/4 tspsea salt
1/4 tsp MSG
1 TBSProasted peanuts
1TBSPlime juice
1TBSP fish sauce
1TBSPcreamy peanut butter
To finish
14-16ozEnglish or Persian cucumber(sliced/shredded/smashed/ribboned)
1/2cupcherry tomatoes(halved)
Instructions
For the dressing
In a mortar & pestle, add in the garlic, pepper, salt, msg, & sugar. Pound until the garlic & pepper is crushed. Then add in roasted peanuts. Pound a little bit (you can leave it chunky for more texture or pound it finely). Then add in lime juice, fish sauce, and creamy peanut butter. Mix well until the peanut butter is well incorporated. Taste and adjust to your liking. Set aside while you prep the cucumbers.
To finish
In a bowl either shred, slice, smash, or ribbon the cucumbers (it's up to you). Add in the cherry tomatoes along with the dressing. Toss to coat and enjoy immediately. If you let it sit, it will get watery so enjoy it while it's still crunchy!
Notes
This dressing can be made a day ahead and be put into the fridge. It's also great as a dip. So instead of dressing the cucumbers, you can simply just dip the cucumber right into the dressing.
