Hello to another one of my dad’s go to stir fry dishes he loves to make. Yes! Canned Sardine stir fry. Canned sardines were something we often had in our pantry and whipped out anytime we wanted a quick meal. It was something my dad would often make for us because it was easy & flavorful. Because herbs were something we often grew in our garden, my dad would utilize them in this dish to give the sardines a little more depth of flavor. Because this stir fry is so aromatic and herbaceous, a little bit goes a long way with some fresh steamed rice or sticky rice. So I hope you can give this one a try if you like canned sardines. Main Ingredients
Canned Sardines: I grew up using Three Nine Brand Sardines. This brand has usually 2-3 large pieces of sardines in tomato sauce and some salt. It’s fairly soft textured and the bones and also not too big or sharp. For this recipe, I recommend using canned sardines that are in tomato sauce.
My Dad loves to put lots of aromatics/herbs into this dish to give it more flavor. He loves to add lots of lemongrass, garlic, shallots, lime leaves, cilantro, green onion, peppers, basil and dill. Seasoning is pretty basic. Just salt and msg.
Saute the sardines, herbs, and aromatics in some oil. My dad likes it more on the dry side so he does cook it a little longer. If you want this stir fry to be a little more saucy, add some fresh tomato slices into it. Season and enjoy!
Eat over fresh steamed rice or dip sticky rice straight into it. It’s so aromatic and a little bit goes a long way. Happy cooking!

Canned Sardine Stir Fry
Ingredients
- 1 can Sardines in tomato sauce (Three nine brand) [425g]
- 1/4 cup vegetable oil
- 1/4 cup minced garlic
- 1/4 cup minced lemongrass (1-2 lemongrass stalk)
- 1/2 cup shallots (chopped)
- 2 Tbsp kaffir lime leaves (finely chopped)
- 1/4 cup fresh Thai basil
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup fresh chopped dill
- 2 whole Birds Eye chili pepper (chopped) [Add more if you want more spice]
- 1/2 tsp MSG
- 1 tsp salt
- Steamed rice or Sticky rice to enjoy it with
Instructions
- In a good nonstick pan, add in 1/4 cup of vegetable oil. Heat to medium high and add in the minced garlic, lemongrass, and shallots. Saute for 2-3 minutes until the garlic starts to turn a little golden. Then add in the sardines along with the tomato sauce it comes in along with the salt and msg. Saute for 3-5 minutes until most of the moisture has evaporated. Then add in all the herbs. Saute for 15-30 secs and then turn off the heat. Taste and adjust seasonings. Serve while it's still warm and enjoy over some fresh steamed rice or dip sticky rice into it. Enjoy!
