Hello to another one of my dad's go to stir fry dishes he loves to make. Yes! Canned Sardine stir fry. Canned sardines were something we often had in our pantry and whipped out anytime we wanted a quick meal. It was something my dad would often make for us because it was easy & flavorful. Because herbs were something we often grew in our garden, my dad would utilize them in this dish to give the sardines a little more depth of flavor.
1canSardines in tomato sauce (Three nine brand) [425g]
1/4cup vegetable oil
1/4cupminced garlic
1/4cupminced lemongrass(1-2 lemongrass stalk)
1/2cupshallots(chopped)
2Tbspkaffir lime leaves (finely chopped)
1/4cup fresh Thai basil
1/4cup chopped green onions
1/4cupchopped cilantro
1/4cup fresh chopped dill
2wholeBirds Eye chili pepper(chopped) [Add more if you want more spice]
1/2tspMSG
1tspsalt
Steamed rice or Sticky rice to enjoy it with
Instructions
In a good nonstick pan, add in 1/4 cup of vegetable oil. Heat to medium high and add in the minced garlic, lemongrass, and shallots. Saute for 2-3 minutes until the garlic starts to turn a little golden. Then add in the sardines along with the tomato sauce it comes in along with the salt and msg. Saute for 3-5 minutes until most of the moisture has evaporated. Then add in all the herbs. Saute for 15-30 secs and then turn off the heat. Taste and adjust seasonings. Serve while it's still warm and enjoy over some fresh steamed rice or dip sticky rice into it. Enjoy!
Notes
You can cook the sardines less so it's a little more saucy but my dad likes it more on the slight drier side. So it's up to you. You can also add some fresh chopped tomatoes for an even more saucier sardine stir fry.
