My Childhood Favorites: EGGS! 4 ways

I’ll be doing a Nostalgic Childhood Food Favorites series where I’ll be sharing with you all food I grew up eating as a kid. These food brings back a lot of memories and makes me think… “hmmm does any other family eat like we do too?. Some recipes will be kind of bazaar but some may seem very familiar!

So first things first, I wanted to show you all how I grew up eating eggs! 4 WAYS! šŸ™‚ Eggs with fish sauce, eggs with tomatoes, eggs with green onions and ginger, and eggs on toast with cheddar and sriracha. Hopefully some of you find these super simple egg recipes nostalgic. If you have any other way you like to cook your eggs or how you grew up eating them, do let me know down in the comments! My Childhood Favorites: EGGS! 4 ways

Serves: 1 Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • ---FISH SAUCE EGGS---
  • 2 eggs
  • 1 tsp fish sauce
  • 1/4 tsp pepper flakes
  • 1 tbsp oil
  • ---TOMATO EGGS---
  • 2 eggs
  • 1/2-1 roma tomato sliced or 8-10 cherry tomatoes
  • salt and pepper to taste
  • optional: sliced green onions to garnish
  • 1 tbsp oil
  • ---GREEN ONION & GINGER EGGS---
  • 2 eggs
  • 2 green onions sliced
  • 1 tbsp minced ginger
  • salt and pepper to taste
  • 1 tbsp oil
  • ---EGG CHEDDAR TOASTY---
  • 2 eggs
  • 1 tbsp butter
  • 1 slice cheddar cheese
  • salt and pepper to taste
  • 2 slices of bread
  • sriracha

Instructions

Fish sauce eggs

In a pan, heat up 1 tbsp of oil. Add in the eggs. Let it sizzle and then add in the fish sauce and pepper flake. Cook just until the whites are cooked and yolks a little runny if desire. Serve over white rice and enjoy! You can drizzle a little fish sauce over the top if you want as well. This was how we grew up eating it. šŸ™‚

Tomato eggs

In a pan, heat up 1 tbsp of oil. Add in the sliced tomatoes and sprinkle it with salt and pepper. Cook until the tomato juices are released. Then add in the eggs and sprinkle with a little bit of salt. Cook until eggs are to your desire doneness. Serve with rice. Sprinkle chopped green onions if you desire.

Green onion ginger eggs

In a bowl, crack two eggs. Add in the chopped green onions, ginger, salt and pepper. Mix well. In a pan heat up 1 tbsp of oil. Then add in the egg mixture. Cook it either scramble or omelet style. I like mine omelet style. Once cooked, serve with rice and enjoy!

Egg cheddar toastyĀ 

In a pan, melt 1 tbsp of butter. Once melted, add in the two eggs, salt and pepper. Cook to medium and then top with cheddar cheese. Turn off heat and let the cheese melt while you toast the bread. Once the bread is toasted, place the eggs in and add a little sriracha on top. Close with the other slice of bread and cut the sandwich in half to serve. Enjoy!

Notes

Be adventurous and add other ingredients you like! These are the simplest flavors I grew up eating and remembering. šŸ™‚
