Tapioca Jello
IT’S SO BEAUTIFUL IM GONNA…. Okay, Okay, hey all! I was inspired by the three color widely used in the three color dessert called Naab vaam and decided to put it in jello! This jello is made with agar agar (a species of algae), coconut milk, coconut water, coconut meat, and many more toppings! You can go crazy and put any toppings you like in the jello base. Your kids would have fun making this with you as well. Here, I decided to just put tapioca and fresh coconut meat. It’s so easy!

NOTE: The recipe calls for 1/2 cup of tapioca pearls. In the video I used 1 cup because I was using the other half for another recipe I was working on. So don’t get confused!
Ingredients
- 1/2 Cup Tapioca Pearls
- 6 cups water
- 1/4 Cup Sugar
- 1 1/2 tsp agar agar
- 1/4 tsp salt
- 1 Cup Coconut Milk
- 1 Cup Fresh Coconut Water (boxed or canned coconut water works too)
- 8 inch Pandan Leaf
- 1/3 cup Fresh Sliced Coconut Meat
- 1 4.5in x 7in container
Instructions
Boiling the Tapioca pearls
1) Add 6 cups of water into a pot. Bring it to a boil. Once the water comes to a boil add in the tapioca pearls. Stir as you go so the tapioca does not stick to the bottom of the pan. Let it cook and stir as you go for 5 minutes. Turn off heat, put lid on and let it sit for 15 minutes covered. After 15 minutes, rinse well with cold water and drain well.
2) In three bowls, add in 1/4 cup tapioca to it. Color each with 3-4 drops of red food coloring, pandan extract, and yellow food color (feel free to choose your color if you like!)
3) In you 4.5in x 7in container, scoop and mix match the tapioca in. Add in 1/3 cup of the sliced coconut meat on top. Set aside. (You may not use all your tapioca pearls, and that's fine! Save it for another batch)
In another pot add
4) Agar agar, sugar, and salt. Whisk. Add in coconut water, coconut milk, and Pandan leaf.
5) Turn on heat, stir as you go and let it come to a boil. Once it comes to a boil turn off heat, take pandan leaf out and pour it over the tapioca and coconut meat.
Optional: Torch the foam on the top for a better surface texture.
6) Let it sit for 10 minutes covered before putting it in the fridge.
After 10 minutes, put it in the refrigerator for 2 hours or until it is completely set.
7) Stretch the container to release some air and then flip the jello down.
Cut into squares and share away!

Notes
I did not use all my tapioca pearls. Any leftover, feel free to make another batch of the coconut jello to finish off your tapioca! Feel free to add other toppings of your choice. Add jackfruit, other kinds of jello, sweet beans, sweet corn, etc!
