My mom has always been someone so full of love. She is the nicest person you’ll ever meet. She’s humble. She’s hardworking. She’s creative. She has the best smile. She cooks food that touches my soul. She’s truly an inspiration. I have learned so much from her and will continue to treasure everyday and everything I get to do with her.

RICE + EGGS w/ FISH SAUCE Most of you probably g RICE + EGGS w/ FISH SAUCE 

Most of you probably grew up with eggs, soy sauce & rice. But I grew up with eggs, fish sauce & rice. It was such an easy meal to make before heading out to school or whenever we wanted something quick. Since my dad raised chickens growing up, using fresh farmed eggs was even more special because it made it tastier & much more richer in flavor. As the fish sauce cooks, it caramelizes and gives the eggs a delicious umami saltiness to it. I still love it till this day.

🧈 BUTTER SUGAR TOAST 🍞 Ah yes, this butter 🧈 BUTTER SUGAR TOAST 🍞 

Ah yes, this butter sugar toast has been a classic one growing up. Toasting inexpensive white bread, spreading on butter and sprinkling sugar on top hits different. During my earlier childhood days, we would actually use Imperial vegetable oil spread instead of butter because it was cheaper…and also because we thought it was also butter 😅 Once we were introduced to actual butter, it became a game changer. I haven’t had this in a while so it was quite delicious & so nostalgic.

🍚 RICE & BACON 🥓 This combo is a classic. 🍚 RICE & BACON 🥓 

This combo is a classic. It was something my siblings and I would only get to eat every once in a while for breakfast before heading out to school. Bacon wasn’t cheap (and still not cheap) but when it was on sale, my mom would buy a few packs, fry it up super crispy and tell us to eat it with rice. It was never enough because my brothers would basically take all the bacon haha 😅 oh the memories. 

Is this a classic combo for you too? What dishes did you have for breakfast growing up?
