Good day foodies! Here is a classic rice vermicelli noodle recipe that is eaten in our family and seen being eaten in Thailand a lot! Most Thai vendors make the noodles fresh and in front of you; which I love. It’s super simple but still hits all our taste buds. The cooked vermicelli noodles are served with wilted cabbage and morning glory and topped with the pepper sauce that makes my mouth water every time! So here’s my recipe for you all to try out!

Cabbage and Morning Glory (Phaav npoob)
Pepper sauce to go with the Qhaub Poob
Feel free to add in how ever much pepper sauce you like! Adjust to your taste and enjoy!
Ingredients
- Fresh Rice Vermicelli noodles
- or 3 packs of dried vermicelli noodles cooked
- 1 medium size cabbage
- 1 bundle of morning glory vegetable
- 1/3 cups sugar
- 1/2 cup hot boiling water
- 2/3 cups fish sauce
- Juice from 2 limes (or more)
- 5 Thai chili (minced)
- 1 garlic clove (grated)
Instructions
Cooking the noodles
If you are using the dried version of the vermicelli noodles. Follow the instructions on the back of the package. If you want to make fresh noodles, check out my recipe!
Making the sauce
In a bowl add in your
- Sugar
- Hot boiling water
Stir - Fish sauce
- Lime Juice
- Thai chili
- Grated garlic
Taste and adjust if you like! Set aside.
Cooking the vegetables
Cut your cabbage and morning glory into bite size pieces after washing it. Cook a few handful at a time in hot boiling water just until the vegetables starts to wilt. Then wash it with cold water. Drain it well.
*If you want, feel free to cook all the vegetable at once and just let it sit in a bowl (DRAINED) so that anyone who wants to come eat the noodles can just grab a handful of already cooked and chilled vegetables. In the video we only did it per person.
Serving
Place a few bundles of your cooked noodles in a bowl or plate. Add in your wilted vegetables and ladle a few spoons of the pepper sauce over. Mix and enjoy!

Notes
This dish is all about your preference when it comes to the sauce! So add as much lime, pepper, sugar, etc after making it! Feel free to adjust. This recipe is the one we love to use!
