Ncuav Pas (Whole Wheat Version)

Hello everyone!

Today, I’ll be showing you one of the many versions of Ncuav. Ncuav is typically made from sticky rice. Ncuav can range from corn, soybeans, Jasmine rice, banana coconut, and many more other flavors. But this version is made with the addition of whole wheat flour. Super easy and convenient during hard times. You can make a big batch of these, wrap them well, and stick it in the freezer for future consumption. Not only that, they are great for snacking, for special occasions, potlucks, etc. This version is not so sweet. It’s perfect for those who doesn’t like super sweet food. It’s also a perfect snack for the elders. So I hope you give it a try and I hope you are all staying safe and healthy out there. We can all get through this together if we work together as a whole. Main ingredients

Whole wheat flour, glutenous rice flour, sugar, pandan water, coconut milk, milk, salt, and banana leaf

Ncuav Pas (Whole Wheat Version)

Serves: Makes 25 individual portions Prep Time: Cooking Time:

Ingredients

  • 1 bag glutinous rice flour (16oz)
  • 2.5 cups whole wheat flour
  • ½ cup sugar (add more if you desire)
  • ½ tsp salt
  • 6oz coconut milk (~3/4 cup)
  • 6oz pandan water (¾ cup water blended with 1 pandan leaf cut into pieces)
  • 16oz regular whole milk (2 cups)
  • Banana leaves

Instructions

Mixing the dough

In a bowl, add in the glutinous rice flour, whole wheat flour, sugar, and salt. Mix well. Then add in the coconut milk, pandan water, and milk. Mix until you get a pliable dough. Set aside while you get the banana leaf ready.

Taking care of the banana leaf 

Cut the banana leaf to your desire size allowing about 3-4 inches overhead to insure the dough is completely wrapped and covered by the banana leaf. If you are using frozen banana leaf, rinse it well and pat it dry.  Trim the hard center stem off. Then quickly put it over a flame to allow the banana leaf to be flexible to wrap and prevent it from cracking/breaking on you while wrapping. Do this to all the cut banana leaf.

Wrapping

Place one banana leaf on the cutting board. Add about 1/4 cup or 1/3 cups of the filling (size of the ncuav depends on you). Wrap it starting from the bottom up. Then fold the ends in and thats it. Continue until all the dough it used up.

Steaming

Place the ncuav in a steam bottom side down. Steam for 25-30 minutes until the dough is completely cooked. Let it cool before consuming. And Enjoy! 🙂

Notes

Ncuav pas can last up to 1 week in the fridge and about 3 months in the freezer. Make sure to wrap it well before storing. Reheat in the steamer or microwave to get the soft & chewy texture back.
