Hello Foodies! I wanted to share with you all my Mom’s beautiful chayote plant this season. It has been a good season for our chayote plant. There’s so much chayote growing we didn’t want to pick any of them since they look so pretty! However, today I’ll be showing you all how we like to eat it. Using both the whole chayote and the chayote vine/shoots. We’re going to stir fry it with chicken. Pretty simple and very clean in flavor. So if you want something a little lighter, this dish is for you. Chayote belongs in the gourd family. It is fairly sweet and neutral in flavor. Great for soups, saute, stir fry, steaming, stews, etc. I love mine steamed. So hopefully you all enjoy this simple stir fry dish and let me know how you like to cook up your chayote š Happy cooking!
CHAYOTE
Chayote grows on vines. They need support so they can branch out and grow its fruit. Look at the abundant of chayote growing in our garden this year. So pretty!

Saving a more aged chayote to sprout and be planted next season. As you can see the seed is already starting the sprout out. This is what it looks like. To keep it safe through the winter, keep it in a dry dark place. Once spring hits, plant it in the ground. You’ll notice the seed will start to sprout out even longer.
Chayote vines/ outer shoots. Yes! The outer shoots are edible as long as they are tender. Great for stir fry or soups.
Trimmed and washed well before usingShredding the chayote with a knife to get different texture. Feel free to use a shredder to shred it if you want. You can also cut it however you like to stir fry it. Up to you. This style is the way I grew up eating it so I like to do it this way. š
Other ingredients to add: Choice of protein (I’m using chicken breast today)
Seasoning includes salt and mushroom seasoning. I’m also adding in some chili peppers, minced garlic, and lemongrass.
Stir fry and enjoy with rice. You can also add water and make it into a soup if you like. Super simple!

Please dear, since here in Sri Lanka only the chayote pears are available at the markets, but unfortunately not their shoots/vines, can you think of any other kind of greens I could use to make above dish as pretty as yours?

I would use Chinese broccoli, Spinach, or any leafy greens you like to use for stir fry. This dish is pretty flexible. You can even use bamboo shoots š
