Sour Bamboo Soup w/ Pork (Ntsuag Xyoob Qaub)

Sour bamboo soup! One of the many ways to consume bamboo. Today, I’ll be showing you one of the many ways we like to prepare sour bamboo. In this version, we’ll be adding smoked pre-grilled pork ribs/chop since it gives the soup a great smoky and char flavor. It also compliments the sourness from the bamboo as well. As always, you can make this soup with chicken or beef. It’s also great with them too. If you like sour soups, this ones for you. Main Ingredients

Sour Bamboo

2 kinds: Dragonfly brand is more tender. Cock brand is more crunchy. You can add one over the other or add both. Up to you šŸ˜‰

Rinse before using it to reduce the sourness
The meat:

We are using smoked pre grilled pork chops/ ribs. You can use chicken or other portion of your choice. It does not need to be grilled. Any protein works. We are using smoked pre grilled pork because it gives a good flavor to the sour broth.
Herbs and aromatics:

The classic lemongrass, pepper, and cilantro
Boil Serve with rice

Sour Bamboo Soup w/ Pork (Ntsuag Xyoob Qaub)

Serves: 6-8 Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1 1/2 lbs smoked or pre-bbq pork (belly, ribs, bones)*
  • 28 oz sour bamboo (I used both Dragonfly and Cock brand)
  • 10 cups water
  • 2 tsp chicken bouillon seasoning
  • 2 tsp salt (add more or less)
  • 1 lemongrass
  • 4 chili peppers (slivered)
  • 6-8 sprigs of cilantro (chopped)

Instructions

1) Cut meat to desire size. Set aside. Drain and rinse sour bamboo about 2 times. Set aside.

2) In a pot, add in 10 cups of water and bring to a boil. Then add in cut meat. Add salt and chicken bouillon seasoning. Cover and cook until meat is cooked all the way and the texture is to your liking. Then add in the sour bamboo, lemongrass, and slivered chili pepper. Simmer for 5 minutes, taste and adjust seasonings. Then turn off the heat and serve with rice. Enjoy!

Notes

*Feel free to use protein of your choice. Chicken works too. Beef is also great. Up to you. The meat does not have to be pre bbq. This is just personal preference šŸ™‚

I just picked up some jars of pickled bamboo shoots so I could slurp your some soup during this pandemic. Yours looks yummy!
