Fresh Spring Rolls w/ Hmong Sausage

Hello Foodies!

Here it is! Another way you can use up Hmong sausage! FRESH SPRING ROLLS! Um, I’m asking you to put cold sausage into your spring rolls? YES! Don’t freak! I get it, Hmong sausage is suppose to be eaten warm, but as long as you cut it nice and thin and consume the rolls day of making it, it’s going to be alright, ESPECIALLY with the peanut dipping sauce I’ll be sharing to you all too. It’s that good. Yum! So I hope you all enjoy!

*sub out the sausage for other protein such as shrimp, chicken, tofu or pork loin. Hmong sausage can be fatty, so if you don’t like “cold” sausage meat, sub it out for something else. I cut the sausage pretty thin so it’s easier to eat and it tasted just fabulously yummy! Special thanks to Kty Sausage Company for providing me with the Hmong sausages so I can share this recipe with you all! 🙂 Their sausages has the right ratio of fat to meat if you are curious as to how lean/fatty it is. Not oily and not too dry.

Fresh Spring Rolls w/ Hmong Sausage

Serves: 4-6 Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • Hmong Sausages (or any protein of your liking)
  • 1-2 packets of vermicelli noodles cooked
  • 1 packet of rice paper (large size)
  • --Herbs/ vegetables of your choice--
  • Cilantro
  • Mint
  • Basil
  • Shredded carrots
  • Shredded purple cabbage
  • Lettuce leaf
  • *you can also add beansprouts and or cucumbers too
  • ---Sweet Peanut Dipping Sauce---
  • 1/4 cup peanut butter
  • 1/2 cup sweet chili sauce (I use Mae Ploy)
  • 1 tsp fish sauce
  • 1/2 cup water
  • 1 Tbsp lime juice
  • Chopped green onion/ cilantro
  • Roasted peanuts (crushed)

Instructions

1) Make the dipping sauce 

In a saucepan add in the sweet chili sauce, peanut butter, water, and fish sauce. Heat until the peanut butter dissolves (should take about 2-3 minutes). Turn off heat and then add in the lime juice, fresh chopped green onion and cilantro. Top with the crushed peanuts and stir. Chill and set aside.

2) Cook your vermicelli noodles and Hmong Sausage

Feel free to use any kind of protein you prefer. Options include: Chicken breast, pork lion, shrimp, tofu, Vietnamese ham etc.

3) Prep your herbs and vegetables

Feel free to use any kind of herbs and vegetables you want. Basics include the ones mentioned above. Be creative!

4) Set and ROLL 

Wet your rice paper in room temperature water. Place on flat surface and layer the herbs/vegetables, noodles, and meat inside. Roll from the outside ends to the bottom up (just like a burrito). Repeat until you use up all items.

Serve with sweet chili dipping sauce!

Notes

Double the recipe for the dipping sauce if your family loves to dip a lot. This dip goes great with egg rolls too!

I am so excited I found this recipe! I was at my local hmong grocery today and purchased some of my regulars (rice papers and rice vermicelli) but also found some wonderful ginger pork sausage! I’ve been making spring rolls for years and I am so excited to use the ginger pork sausage for my next batch!
