Pandan Brown Butter Rice Krispie Treats

I wanted to share a very fun and simple rice krispy treat for you all to make for the holidays. And these are pandan brown butter flavored. Sweet, nutty, and has a subtle pandan flavor. Shape and decorate it however you like. Great to make as a gift or to make with your family.
Prep Time 8 minutes
Cook Time 1 minute
Course Dessert
Servings 15 squares

Ingredients

  • 8 oz salted butter
  • 2 lbs marshmallows
  • 2-3 tsp pandan flavoring/extract Or more if you want more color/flavor
  • 1 tsp vanilla extract
  • 12 cups rice krispies

Decorations

  • White candy melts (Wilton brand)
  • Desiccated coconut
  • Mini m&m's
  • Sprinkles (Wilton's Christmas blend)
  • Black icing (I used Betty Crockers)

Instructions

  • In a good non stick pot, add in the salted butter and let it melt fully. Then stir and cook until the butter has browned. I like a slightly medium to a shade darker brown butter for a little more flavor. Immediately turn off the heat and add in the marshmallows. Stir until the butter is fully coated all over the marshmallows. Then turn the heat back on low to allow the marshmallows to fully melt. Stir as it melts so it doesn't burn. Once fully melted, turn off the heat. Add in the vanilla and pandan extract. Stir well.
  • In a big bowl, add in the rice krispies. Add in the melted pandan marshmallows and stir until the rice krispies are all coated. Then transfer onto a parchment lined and sprayed 11.5. x 17.2 in. sheet tray. Flattened out ( I like to wear gloves that I sprayed with cooking oil to flattened better) until it's fully covered and pressed. Cool completely before cutting it into squares and decorating it.
