I wanted to share with you my mom's bean thread noodle soup. It's garlicky, herbaceous, savory, light, and so comforting. It's also so easy to make! If you are feeling a little under the weather or just want a light noodle soup dish, this one is for you.
2 tsp fish sauce(you can add a little more at the end if needed)
1lbground chicken
3Chinese sausage links[sliced]
Garnish/Noodles
1/2cupcilantro(chopped)
3-4stalksgreen onions(sliced)
1-2wholelime(sliced into wedges)
Fried garlic in oil(1/4 cup minced garlic fried in 1/4 cup oil)
Fresh cracked black pepper
Other chili sauce/oi/pepper(your choice)
6bundlebean thread noodles (219g dried weight)
Instructions
Soak the bean thread noodles
Soak in hot tap water for about 30 minutes. Drain water and use when you're ready.
For the broth
In a pot, bring the water to a boil. Add in the seasonings along with the ground chicken. Break apart the chicken and let it come to a boil. Then add in the sliced Chinese sausage. Let it simmer for 2-3 minutes until the chicken is fully cooked. Taste and adjust seasoning if needed. Make sure the broth is on a low simmer when you do end up putting it over the noodles. The hot broth will cook the noodles just perfectly.
To assemble
Place the hydrated noodles into your serving bowl. Add as much herbs as you like. Then pour the hot broth over (along with the meat and sausage). Top with fresh cracked black pepper, fried garlic in oil, and squeeze some fresh lime juice over. Mix well and enjoy while it's still hot.
Notes
If you want softer noodles, precook the noodles for a couple of seconds in boiling water before adding the broth over.
