Chili Bamboo w/ Pork Stir Fry

Here's to another super simple and delicious stir fry dish: Chili bamboo with pork stir fry. This is probably my sisters go to dish she likes to make when she wants a simple meal. It's flavorful and oh so good over fresh steamed rice!

Ingredients
  

  • 2 (12oz) jar chili bamboo in oil (drained) [I use Rolin Brand]
  • 1 (9.5oz) canned bamboo strips (drained & rinsed)
  • 2 lbs pork belly (sliced)
  • 1 tsp salt (to season the pork)
  • 1 Tbsp garlic (minced)
  • 1 small yellow onion (rough chopped)
  • 4 stalk green onion (sliced)
  • 1 1/2 Tbsp oyster sauce
  • 1 tsp chili flakes (add more or less depends on you)

Instructions
 

  • Make sure to drain the chili oil bamboo in a strainer before using. Let it drain for at least 15 minutes. Discard the excess drained oil. Also drain the canned regular bamboo strips and rinse well. Allow to drain before using as well. 
  • In a pan, add in the sliced pork belly and salt. Cook until the pork has some golden color to it. Drain all the excess grease that rendered out. Then add in the minced garlic. Stir fry for 1 minute or so. Then add in the chopped onion. Let it cook for a minute. Then add in the chili bamboo, bamboo strips, oyster sauce, and pepper flakes. Cook for another 3-5 minutes or so. Then add in the chopped green onions. Turn off the heat and allow the residual heat to wilt the green onions. Taste and adjust seasonings. Serve over fresh steamed rice and enjoy.
